Chef Rob Flores of Pillunya will be curating a unique menu for an exciting pop-up hosted by Local Roots NYC.

Pillunya is a Peruvian-fusion ghost kitchen that provides a delivery-only service, and offers private dinners/pop-ups. This is a rare opportunity to dine in with the chef in the Local Roots test kitchen.

The menu will feature explosive Peruvian and Asian flavors, as well as ingredients from Local Roots' small, local farm partners for a truly seasonal farm-to-table experience.

On the menu for the pop-up:

  • Spicy fried chicken sandwich, shiso, shoyu aioli, sesame honey cucumber
  • Korean bbq pulled pork bao with ají amarillo and pineapple jam, chicharrón
  • vegetarian mushroom bao, peanut sauce, salsa macha and sesame seeds

About the chef:

Chef Rob Flores is NYC-born with a Peruvian background. He worked under numerous Michelin Star chefs and restaurants, including Oxomoco in Greenpoint BK. Now, he is trying to adapt to the changes in the industry by creating his own ghost kitchen and collaborating with local businesses.
